West Sixth Brewing is opening a Mexican food truck, and yes, it’s coming to NuLu

You may know West Sixth Brewing from their outpost in NuLutheir Location of the 120 acre farm outside of Frankfurtor one of their two other Kentucky locations.

This spring, they will open another business: a food truck.

The truck, called West Sixth Cantinawill serve Mexican and Tex-Mex classics like burritos, tacos and quesadillas –– plus, of course, beers.

Kelly Hieronymus, director of marketing and creation at West Sixth Brewing, told LEO that the impetus to start the Cantina came from demand: West Sixth needed to provide customers with a consistent food option when local food trucks weren’t available. not available. Most often, customers said they wanted Mexican dishes.

With that in mind, Hieronymus said, serving Mexican food made sense: It pairs well with beer, it’s easy to eat, and it’s something customers of all ages enjoy.

Although the Cantina will primarily operate out of West Sixth Farm, it will make weekly appearances in Louisville at West Sixth NuLu. Hieronymus said the brewery also plans to bring the truck to major city festivals and events like Kentuckiana Pride and NuLu Fest.

West Sixth will post a full appearance schedule on Cantina’s social networks later this spring.

A press release from West Sixth said the Cantina is expected to start operating in February, but Hieronymus said the start date will depend on when the company finishes hiring new staff for the truck. Right now, they’re looking for people who are “passionate about food, beer, and great customer service!” You can apply via a list on this link.

“We’re ultimately focused on making really great beer,” Hieronymus said, “and that’s been our goal since day one. But I think it’ll be a great way to start experimenting with food. with West Sixth, and who knows where that might take us?”
