Tacos Way in Crestview offers authentic Mexican food, “not tex-mex”

CRESTVIEW – Gustavo Paz Rojo’s new Tacos Way restaurant is fueled by his Mexican heritage, his passion for authentic Mexican cuisine and his extensive dining experience.

With a menu featuring high-quality meats, handmade corn tortillas, and homemade salsas, Tacos Way serves customers in a downtown building at 252 N. Ferdon Blvd. (State Road 85) which once housed Uncle Bill’s family restaurant.

The property is between East Oakdale Avenue and the Arirang J restaurant. Uncle Bill closed last spring.

In addition to his new establishment, Paz Rojo runs a Tacos Way that opened two years ago in Lynn Haven in Bay County. Growing up, he spent many years working in his father’s Mexican restaurants in Alabama.

Paz Rojo said the building that housed Uncle Bill’s became available to rent during his long search for a location in Crestview for his new restaurant.

“I was driving by one day and saw a sign that said, ‘Restaurant Equipment for Rent,'” Paz Rojo said on Friday.

Following a major renovation prompted by pandemic-caused delays, Tacos Way opened on January 13.

“It’s been quite busy,” said Paz Rojo, who added that his staff are now more efficient in processing food orders compared to the first days of operation.

Tacos Way has about 50 spots. Its main menu items so far have been its street tacos, asada fries – which consist of steak, fries, guacamole, sour cream and cheese – and Nachos Way, a mix of steak, chicken , shrimp, pico de gallo, lettuce, guacamole, sour cream, jalapenos and cheese.

Other items include Baja tacos with Mahi Mahi or shrimp, crunchy tacos, quesadillas and fajita quesadillas, burritos, fajita and taco salads, street corn and the “Volcano”, which is a steak on a crunchy corn tortilla with melted cheese, onions and cilantro.

Tacos Way also has a free salsa bar.

The restaurant’s meats are grilled over mesquite charcoal and then finished cooking on a gas grill. Paz Rojo said his restaurant’s prices reflect its premium meats and other menu items.

“It’s not Tex-Mex,” he said.

Tacos Way’s drinks include all-natural, fruit-flavored sodas from Mexico. Its desserts include flan, churros and churros with ice cream.

Paz Rojo said he was still finalizing opening hours. Friday hours were 11 a.m. to 9 p.m. Monday through Saturday and 11 a.m. to 8 p.m. Sunday.
