Centro, northeast Minneapolis’ popular counter-service bar and restaurant known for its tacos, margaritas and other casual Mexican fare, is on the rise.
The expansion will begin with two new locations, both of which will open this year. The former Wedge Table on Eat Street will be the first, and it’s key to future expansion, including a restaurant opening later this year in St. Paul, owner Jami Olson said.
“Right now it’s short term and it’s long term,” Olson said. “I want to open five stores in the next five years. I think we have the capacity to do even more than that.
More than half of the 15,000 square foot space on Nicollet Avenue will become a commissary kitchen, servicing future locations as well as an on-site restaurant, which will house Centro, a smaller version of Vivir, the Mexican bakery and the market that shares space with Centro in the northeast, and a third concept, currently in development.
This location will begin with delivery and catering only, which will expand as the operation builds capacity. On-site restaurants and bakery will open this summer. The St. Paul location, which is about to be finalized, will open this fall.
Olson, who has resided in St. Paul for nearly 17 years, said opening a boutique in the city where she lives was important to her. And this brand’s expansion plans began almost as soon as Centro opened in 2018.
“I fell in love with our concept and our team,” Olson said. “I love the energy of the space, the food and drink, but also the environment we create for customers, which really sets us apart from other fast-casual spaces.”
