About: Bellota (“acorn” in Spanish) is a Mexican restaurant from the team behind the Boulder Oak at Fourteenth and Corrida restaurants. Its first location is at The Source in Denver.
What is on the menu: “Vivid interpretations of regional dishes deeply rooted in tradition and authenticity with a menu that showcases northern Mexican flavors and ingredients with personal meaning through heritage recipes passed down from generation to generation,” according to the restaurant. The a la carte menu offers a wide variety of tacos, chicken enchiladas, cochinita pibil, chile rellenos, pork belly in mole sauce, and homemade salsas. The bar program includes tequila and mezcal cocktails, margaritas, wine and beers from Ska Brewing.
Who cooks: James Beard Award semi-finalist Manuel “Manny” Barella is the executive chef and partner. Born and raised in Monterrey, Mexico, he previously worked at Frasca in Boulder, Uchi in Denver, and Michelin-starred restaurants in Napa Valley. He opened the first Bellota in 2020.
After: The 2,900 square foot restaurant seats 100 people (including the patio) and is “vibrant with bright colors and decor designed to evoke Chef Manny’s homeland,” according to a statement.
